- Makes 15 bars•Time: 45 minutes -
Ingredients
- 2 cups oats
- ½ cup mixed seeds
- ½ cup tablespoons raw & unsalted nuts, crushed
- 2 tablespoons raisins (or cranberries)
- 2 tablespoons honey, raw
- 1 teaspoon xylitol
- 1 teaspoon vanilla extract
Method
- Preheat oven to 150°C and grease flat pan.
- Mix oats, seeds, nuts and raisins in a large bowl.
- Add xylitol, honey and vanilla to mixture. Mix together well.
- Spread out mixture on the oven pan. Make sure it is densely spread (about 1 - 2cm high)
- Bake at 150°C for 20 minutes or until “dry” and crispy. Allow to cool down completely and cut into bars.
Marna’s handy tips
- You can also add coconut flakes: replace ¼ cup seeds with ¼ cup coconut flakes for a different taste
- Chocolate bars: leave out raisins and halve the nuts used: then add ½ cup chocolate chips
- The baked goods should cool down for at least 2 or 3 hours before you cut it - it may crumble and break apart if you cut it while it is still hot
- Enjoy as a snack with a cup of rooibos tea; or keep it in a container for a easy snack on the go.
